Ever since I went gluten free I have missed my mother’s cardamom bread. Don’t be fooled by the large list of ingredients. It is a simple bread and the bread machine takes half of the work for you. This GF version is moist and delicious, and now I can enjoy one of my favorite sweet breads again.
Sift all dry ingredients except for the yeast together in a medium sized bowl. Set aside for the moment.
Add your wet ingredients to the bread machine pan, then add the sifted dry ingredients on top. Place the yeast on top of the dry and set the bread machine for the dough setting. Scrape the sides of the machine a couple of times while it is mixing to make sure all the ingredients are incorporated.
When the dough is finished, place the dough on a piece of parchment paper. Place another piece of parchment paper on the top and roll out into 15×15″ rectangle. Spread the top of the dough with butter and sprinkle with a mixture of brown sugar, cinnamon and cardamom.
Fold up the edges of the dough about 2 inches on each side and use the parchment paper to roll dough into a loaf to fit into a well greased 9″ bread pan. Cover with a wet towel and place in a warm spot to rise for 1 hour.
Bake at 300 degrees F for 60 minutes. Remove from the bread pan.
For the (optional) glaze, add all ingredients into a small saucepan and bring to a boil. Boil for 1 minute. Pierce small holes in the top of the bread and brush glaze onto bread while it is still cooling. Cool, slice and enjoy.
