These dense, fudgy, chocolate-covered cookies are gluten-free and refined sugar-free.
Preheat the oven to 350 F. In a mixing bowl, combine the peanut butter, egg, honey, vanilla and salt. Mix until smooth. Mix in the cocoa powder.
Roll the dough into 1.5-inch balls and place on a greased baking sheet two inches apart. With the palm of your hand, flatten the spheres slightly.
Bake the cookies for 8-10 minutes. Remove from oven. They will firm up as the cool. Let them cool completely.
Melt the chocolate in a microwave, at medium power for about 1 minute 30 seconds, stopping every 30 seconds to give the chocolate a stir.
Dip the top of a cookie in the chocolate. Place on a baking sheet. Repeat with the rest of the cookies. Sprinkle gold dust over the cookies, if using. Let the chocolate set, then eat!
