The secret to these scones is Erewhon’s Crispy Brown Rice with Mixed Berries cereal. The fruit add a touch of sweetness and the cereal adds a bit of crunch. To make them clean, I substituted the egg for applesauce, used psyllium husk instead of xanthan gum and used brown rice syrup instead of honey. The result was marvelous.

I love all things pesto! Since I eat a gluten-free diet, I am always looking for new rice dishes. This is a great dish to satisfy my Italian food cravings without pasta. This yummy side dish goes great with grilled chicken or fish.

This is a different twist on the average flourless cake, a little more sophisticated. I will be giving this a try, thanks for sharing.

I made this for a gluten intolerant friend and it turned out so well! I didn’t realize until after I’d started that I was short one egg, so I made the cake with 5 whole eggs instead of 6, but it didn’t seem to suffer from it. The top of the cake formed a crispy meringue-like crust and the center was fudgey and ooey gooey and delicious!
