Description

Easy and kid-friendly gluten-free and flourless peanut butter cookie recipe. Great to whip up when you have a mad cookie craving.

Ingredients

  • 1 cup Creamy Peanut Butter
  • 1 cup Sugar
  • 1 whole Egg
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt

Preparation

Preheat oven to 350F.

Blend all ingredients together until thoroughly mixed. Roll the dough into balls (approximately 1 tablespoonful each) and place onto a wax paper-lined baking sheet.

Bake for approximately 8-9 minutes or until cookies flatten and start to split.

I have a similar recipe, but with no soda or salt, and they are delicious! Just one cup each of PB and sugar plus one egg. So easy!

Marci, what a great idea! I bet they would be VERY tasty with stevia. Did you use powdered or liquid?

Shari, I’d wager parchment paper would work just about the same as wax paper.

I just made them and next time I’ll halve the salt, or maybe leave it out altogether. The peanut butter seems to have enough.

I’ve never baked anything on waxed paper. Would parchment paper work too?

These were fantastic! I like this recipe better than the Kraft 3-ingredient recipe on the side of the peanut butter jar. I marbled half the batter with Nutella. Because sometimes, you just need peanut butter and Nutella. Awesome cookies!

Hmmm…they were interesting! I would recommend leaving out the salt. Mine didn’t flatten by themselves, but that’s easy to remedy.
