Wash, but do not peel potatoes. Put them in a pot with enough water to cover potatoes, and cook until they are tender (approximately 30 minutes). Drain off the hot water and pour some cold water on top of the potatoes to cool them. When they are cool enough to handle dice the potatoes and place them in a large bowl. Add all of the other ingrediants and mix well. Refrigerate until ready to be served.
