Boil the whole potatoes until fork tender and cool completely in the fridge overnight.
When potatoes are cold, with your hands, break up the potatoes into bite-sized pieces.
Mix together mayo, sour cream, mustard, salt and pepper to taste.
Toss potatoes, sauce, onions and bacon together, reserving a small handful of bacon and spring onions for garnish.
Taste-test, adding salt and pepper as necessary.
When seasoning is complete, garnish with reserved bacon and green onion.
