A bite-sized fiesta in fritter form. Like a pinata for your mouth.
This pie tastes amazing! Everyone who eats it wants the recipe. Don’t be fooled by its looks. It’s very rich and decadent. I’m sorry the photo isn’t of the complete pie. My photo was too large for the download and this is the size that would fit.
My husband could literally make a meal off this recipe for Mexican cornbread that I adapted from one in an old church cookbook. The original recipe called for a cheese layer in the center of the cornbread. Being the lazy baker that I am at times, I just mixed it all in together. It worked out just fine. So well, in fact, that I have continued to mix it that way ever since. Why mess with a good thing?
This pie has been a family favorite as long as I can remember. My husband’s family has a similar one. Family get-togethers would not be complete without at least one. I did update the recipe by using REAL chocolate rather than cocoa as the original recipe required.
Nancy is the Coupon Clipping Cook, which means she not only has an astounding number of recipes to share with us (her TK recipe box is busting at the seams!) but she's also got loads of money-saving tips in her blog (she worked at a grocery store for a number of years, so she knows her stuff). She has some pretty amazing creations, like Roasted Garlic Potato Soup and Nutty Coconut Chicken. Go check them out!
Heather is a Texas native and the blogger behind Heather's Dish. She's mom to Weston, wife to Nate, and they live in Little Rock, Arkansas with their two "stubborn and saucy" dogs Bunker and Keira. In her blog, she shares her photographs, random musings (serious and silly alike), and all kinds of scrumptious recipes---and not just evil variations of her favorite mac and cheese. Her enviable TK recipe box is a testament to that. Go see for yourself!
