Description

A very festive main meal meat dish.

Ingredients

  • 1 whole 7-8 Pound Leg Of Lamb, Boned And Rolled
  • 1 Tablespoon Salt
  • 1 Tablespoon Pepper
  • 2 cloves Garlic, Thinly Sliced
  • 1 cup Cranberry Juice (100% Juice)
  • 1-½ cup Freshly Brewed Strong Coffee
  • 2 Tablespoons Cream
  • 1 Tablespoon Sugar
  • 2 Tablespoons Cognac Or Brandy (optional)

Preparation

Preheat oven to 350 F.

Season lamb with salt and pepper to taste. Make several slits on the top and sides of the meat and insert garlic slices. Place lamb on a roasting rack and roast for 5 minutes.

Pour half of the cranberry juice over the meat and continue roasting to desired doneness. Baste every 10 minutes with the remaining cranberry juice or pan drippings for the first hour of roasting.

Meanwhile, prepare coffee and combine with cream and sugar. Baste the lamb with the coffee mixture every 10 minutes, using a little at a time until the lamb is cooked to your desired doneness. Lamb will be beautifully glazed.

Roasting time (for medium) is approximately 20 minutes per pound for a boned and rolled roast. When the lamb is cooked, remove and cover with foil to rest for 15-20 minutes.

Pour pan juices into a small saucepan and degrease. Bring to a simmer, add cognac, and continue to simmer for 2 minutes. Slice meat and pass gravy sauce with the lamb.
