Boil sweet potatoes. *Heat enough salted water to cover potatoes, using 1/2 tsp salt to 1 cup water, to boiling, and boil until tender (about 30 minutes or so).* Drain potatoes, and slip off skins.
Preheat oven to 350°.
Mix all ingredients with mixer, including potatoes.
Cook for 25 minutes, cover with marshmallows if desired, and cook until mallows are browned and melted (about 5 minutes).
