Description

A sinfully rich chocolate cake with a decadent chocolate ganache frosting. If you make this one, clearly the devil made you do it!

Ingredients

  • 1-¾ cup Flour
  • ¾ cups Cocoa Powder
  • 2 teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Kosher Salt
  • 2 whole Eggs
  • 2 cups Sugar
  • 1 cup Strong Brewed Coffee
  • 1 cup Buttermilk
  • ½ cups Vegetable Oil
  • 1 teaspoon Vanilla

  • FOR THE GANACHE:
  • 1 pound Semisweet Chocolate
  • 1 cup Heavy Cream
  • 2 Tablespoons Sugar
  • 2 Tablespoons Light Corn Syrup
  • 1 Tablespoon Instant Coffee
  • ¼ cups Unsalted Butter

Preparation

Preheat oven to 350 degrees. Grease and flour two 9-inch round cake pans.

In a large bowl, combine flour, cocoa, baking soda, baking powder and salt. Make a well in the center.

Add eggs, sugar, coffee, buttermilk, oil and vanilla. Beat for 2 minutes on medium speed. Batter will be runny. Pour into prepared pans.

Bake at 350 degrees for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for ten minutes, then cool throughly on a wire rack.

Ganache frosting:

Chop the chocolate into fine pieces. In a two-quart saucepan, bring cream, sugar and corn syrup to a soft boil, whisking until the sugar is dissolved. Remove pan from heat and add the chocolate and instant coffee. Cut the butter into small pieces and add to the mixture, whisking until smooth. Transfer into a bowl and cool until it reaches a spreadable consistency. You can chill it for about 30 minutes if necessary.

Spread the cooled frosting on the two layers and enjoy!

I was making this into cupcakes and was actually disappointed in the recipe. I omitted the coffee, but when I baked the cupcakes, the centers sunk. I don’t know if it was just the weather that day or what, but I had to end up scrapping this recipe and going with a backup.

What a fabulous cake recipe!! The ganache is a really nice and decadent touch, too. Although, I’m going to use a little bit less of the instant coffee the next time around. Don’t get me wrong, I’m a huge coffee lover and believe that coffee intensifies the chocolate. However, the ganache had a bit more coffee flavor than I liked. Overall, marvelous!!

I haven’t used this chocolate ganache before, but this is almost exactly the same as my chocolate cake recipe. You will never use a box mix again! It is amazing.
