Description

Delicious, creamy, and highly addicting. You need this at your holiday dinner table.

Ingredients

  • FOR THE PIE:
  • 1 whole Homemade Or Store Bought Pie Crust
  • 1-½ whole Large Sweet Potatoes, Peeled And Cubed
  • 4 cups Water
  • 1 can (12 Oz. Size) Evaporated Milk
  • ¾ cups White Sugar
  • ¼ cups Brown Sugar
  • 3 whole Eggs
  • 1 teaspoon Cinnamon
  • ½ teaspoons Cloves
  • ¼ teaspoons Allspice
  • 1 teaspoon Salt
  • 1 teaspoon Vanilla
  • ¼ cups Butter, Softened
  • 1 whole Orange, Zested
  • Whipped Cream, To Serve
  • FOR THE STREUSEL:
  • 15 whole Gingersnap Cookies, Nabisco
  • 6 Tablespoons Butter
  • ½ cups Sugar
  • ½ cups Flour

Preparation

Preheat oven to 400ºF.

On a floured surface, roll out pie dough and fit to your pie dish.

Boil your peeled sweet potatos in 4 cups of water until they are completely cooked. Once soft, puree sweet potatos until smooth.

Add pureed sweet potatos, evaporated milk, sugars, and eggs to a large bowl. Mix together. Add in spices, salt, vanilla, and butter. Mix until completely combined. Stir in orange zest.

Pour filling into pie shell. Bake for 30 minutes.

While pie is baking, prepare the ginger streusel. In a food processor, combine cookies, butter, sugar and flour. Pulse until mixture is combined and very crumbly.

Remove pie after baking for 30 minutes and sprinkle streusel on top. Return pie to oven and bake for an additional 13 minutes.

Let cool. Serve with whipped cream.

Pie heaven. That is all I have to say.
