Description

Mmmm… Tastes like old fashioned shortcake. Nice and soft with a sugary crust on top.

Ingredients

  • FOR THE CAKE:
  • 1-½ cup Flour
  • ¾ cups Sugar
  • ¾ teaspoons Salt
  • 2-½ teaspoons Baking Powder
  • ¼ cups Butter, Melted
  • ¾ cups Milk
  • 1  Egg
  • ¼ cups Sugar, If Desire May Sprinkle Over Top Of Cake Before Baking
  • FOR THE STRAWBERRIES:
  • 2 pounds Fresh Strawberries
  • ½ cups Sugar

Preparation

Wash the strawberries. Hull them. Then slice them and put them into a bowl and sprinkle 1/2 cup of sugar over top. Stir together and put strawberries in the fridge so the sugar can make a juice for the strawberries.

Heat oven to 375 F. In a mixing bowl, blend all of the cake ingredients (except the last 1/4 cup of sugar) thoroughly with a fork. Beat vigorously for 30 seconds.

Pour into a greased 9 x 9 baking dish. Sprinkle the top with 1/4 cup sugar if desired. Bake for 25 minutes or until a wooden pick inserted into the center comes out clean.

To serve: Cut cake and place strawberries over top and if you wish to eat it the Jones family way put the cake in a bowl, place strawberries over top and cover it with milk… Enjoy!

I found this while looking for an easy Strawberry Shortcake recipe and after reading the reviews I decided to give this one a try. It did not disappoint! I brought it to some friends for dessert and everyone was commenting on how delicious it was. Honestly, the strawberries are so good with it, but I would be happy to have the cake with a cup of coffee. The sugar on top is an added plus! So good and so easy. I will use this recipe again and again.

This cake is amazing! I’ve made it every year during strawberry season for the last 3 years and it does not disappoint. The sugar top adds just enough texture. I top with the macerated strawberries and fresh, homemade whipped cream.

As I was making this I hoped it would be good since it was so easy to make. Oh my gosh, it is so good and I’m so happy! I love strawberry shortcake and this shortcake is so easy but has the flavor of the more labor intensive individual shortcakes. I love the cakelike texture. It soaks up the strawberry juice and is just so yummy. Will definitely make this a lot the rest of the summer.
