Description

Sticky Toffee Pudding is a British dessert consisting of a warm moist light cake topped with a extremely decadent toffee caramel sauce.

Ingredients

  • 4 ounces, weight Chopped Dried Dates
  • ¼ teaspoons Vanilla Extract
  • 1 Tablespoon Strong Coffee
  • ½ teaspoons Baking Soda
  • ¾ cups Very Hot Water
  • 5 Tablespoons Butter, Softened
  • ⅔ cups Sugar
  • 2 whole Eggs
  • ¾ cups Flour
  • 1 teaspoon Baking Powder
  • ⅛ teaspoons Salt

  • FOR THE TOFFEE CARAMEL SAUCE:
  • 2 sticks Butter
  • 1-½ cup Brown Sugar
  • ¾ cups Heavy Cream
  • ½ cups Chopped Pecans (optional)
  • Vanilla Ice Cream, To Serve

Preparation

Preheat oven to 350º. In a food processor, add dates,vanilla extract, coffee, and baking soda. Pulse for a few seconds until slightly blended. Slowly drizzle in hot water, pulsing until completely blended (dates will still be chunky).

In a separate bowl and with a mixer, add butter and sugar and mix until light and fluffy. Add eggs one at a time, mixing after each. Turn mixer to lowest speed. Add in flour and baking powder and salt and just mix until incorporated. Add in wet date mixture and just blend. Do not over-mix. Pour into sprayed muffin tins and bake for 12- 15 minutes, until the middles are fairly firm. Remove from muffin tin and cool a bit.

SAUCE DIRECTIONS:
To make the sauce, melt butter in a small saucepan on medium heat and stir in brown sugar until it gets foamy, about 3-4 minutes. Add heavy cream and stir in nuts if using. Serve warm sauce over warm pudding muffins, with a scoop of vanilla ice cream. Drizzle more sauce over the ice cream.

I tried this recipe and enjoyed it very much! I lived in New Zealand for three years, where this is also known as sticky date pudding. It was a hit with my Bible study group, and has already been requested by a friend as a birthday dessert in lieu of cake.

My only request is that the recipe for the toffee sauce be modified to include a recommended heat level, i.e. medium, or medium-high.

As a fun little tweak, I subbed maple flavoring for the coffee in the pudding itself: yum-o!

Definitely try this recipe!

Ok I was in Australia and one dessert I had was called sticky toffee pudding and it was one of the greatest desserts i have ever eaten. ever. I tried to make a rendition but it was not very good… i am definitely going to try this recipe!! thanks so much!!
