Description

This cake is definitely not a beauty pageant winner, but its spicy flavor and moistness gives it the “Miss Congeniality” prize every time! We usually serve two pieces of cake at a time because everyone always asks for a second piece!

Ingredients

  • ¾ cups Shortening
  • 1 cup White Sugar
  • ¾ cups Dark Brown Sugar
  • 3 whole Eggs
  • 2-¼ cups Unbleached Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • ¾ teaspoons Baking Soda
  • 1 teaspoon Cinnamon
  • 1 teaspoon Ground Cloves
  • 1 cup Milk
  • _____
  • FOR THE ICING:
  • 1-½ cup Confectionary Sugar
  • ¼ cups Water

Preparation

Preheat oven to 350°.
Grease and flour a 33 x 23 x 5 cm pan.
Cream together shortening, brown and white sugars, and eggs.
Sift together the dry ingredients.
Alternate adding dry ingredients with milk into the creamed mixture. Don’t overmix.
Bake for 35 minutes. Test with a toothpick. If the toothpick comes out clean, it is done.
Poke holes with a fork all over the top of the cooled cake.
Mix the icing ingredients (I’m guessing on the measurements for the icing—I usually eyeball it). It should be pretty runny so that it goes into the cake.
Dribble the mixture of confectionery sugar and water on top of the cake. Enjoy!
