These cookies are flourless, made with a nutty almond butter, slightly sweet from the combination of sugar and brown sugar, with a rustic feel from the gluten-free oats. Add dark chocolate cocoa powder for a cookie that is gooey on the inside and crispy on the outside!

Rich, sweet, slightly salty cookies without heating up the oven.

I made these today, and they turned out great! Not as pretty as yours, but probably just as yummy. They’re SUPER rich. I did find them to be a tad stressful to make with an 8month old crawling around needing my attention, who was supposed to be napping. Keeping him happy and taking cookie trays in and out of the oven seemed like an Olympic event.

A week ago, I printed out this recipe for a friend who is an amazing baker – told her that I wanted them for my next bad day. Needless to say, today was that day and these cookies are AMAZING. She did mention that she overcooked a batch or two a little after doing the tango with pulling out the cookies and then putting them back in. I would have NEVER, EVER noticed though because these cookies are beyond delish! They will be a fall favorite in my house for years to come.
The toasty marshamallows and melty chocolate are worth every calorie!!!
