Description

Tender Graham Cookies filled with melty marshmallows and your favorite chocolate bar.

Ingredients

  • 1 cup Soft Butter
  • 1-½ cup Sugar
  • 2 teaspoons Vanilla Extract
  • 3 whole Eggs
  • 3 cups All-purpose Flour
  • ¾ cups Graham Crumbs
  • 1-½ teaspoon Baking Powder
  • ¼ teaspoons Baking Soda
  • ½ teaspoons Fine Sea Salt
  • 12 bars (4 Oz. Bar) Milk Chocolate Candy Bar
  • 12 pieces (2 Oz. Piece) Reese's Peanut Butter Cup
  • 48 whole Large Marshmallows
  • ¾ cups Semi-sweet Chocolate Chips, Melted

Preparation

Preheat oven to 325ºF.

1. Cream soft butter and sugar in a stand mixer until light and fluffy.
2. Add vanilla extract and mix into the butter and sugar.
3. Add eggs and incorporate thoroughly.
4. Measure all dry ingredients into a seperate bowl and mix together.
5. Add mixed dry ingredients to butter and egg mixture
mix until blended.
7. Chill for 15 minutes in the refrigerator.
8. Scoop 1 1/2 ounce scoop on to a baking sheet sprayed with pan release.
9. Flatten cookies until they are 1/4 inch thick and sprinkle tops with additional sugar. Bake cookies for 16 minutes in a preheated 325ºF oven.
10. Once baked, place a cookie upside down on a microwave safe plate and top with marshmallows.
11. Microwave for 12–15 seconds or until marshmallow is soft.
12. Top the hot marshmallow with a milk chocolate candy bar or Reese’s and top with another graham cookie.
12. Melt chocolate chips in the microwave in short bursts (15 seconds) until smooth. Place in a plastic bag or pastry bag and squeeze over the top of the S’mores.

This recipe yields 24 sandwich cookies.
