Description

The salt enhances and balances the decadent and gooey caramel and chocolate layers.

Ingredients

  • FOR THE CRUST:
  • 1-½ cup All-purpose Flour
  • 1-½ cup Quick Cooking Oats
  • 1-¼ cup Light Brown Sugar
  • 1 cup Regular (salted) Butter, Melted
  • ½ teaspoons Cinnamon
  • 1 teaspoon Baking Soda
  • _____
  • FOR THE TOPPING:
  • 1 jar (19 Oz. Jar) Butterscotch Caramel Topping (You Can Use A Smaller Jar, Adjust The Flour If You Do)
  • 6 Tablespoons All-purpose Flour
  • 1-¼ cup Semi-Sweet Chocolate Chips
  • ¼ teaspoons Coarse Kosher Salt Or Coarse Sea Salt

Preparation

Preheat oven to 350º. Grease a 9×13 glass baking dish with cooking spray (make sure you get the sides too).

Combine flour, oats, sugar, butter, cinnamon and baking soda in a large mixing bowl. Press half of the flour mixture into the baking dish; bake for 10 minutes.

Pour caramel topping into a medium size bowl and stir in the 6 tablespoons of flour.

Pull baking dish from the oven, sprinkle chocolate chips over the warm crust and pour thickened caramel evenly over the chocolate chips (you can use an offset spatula to help spread the caramel). Sprinkle the coarse salt over the caramel topping.

Crumble the rest of the crust mixture evenly over the caramel topping. You can gently pat the crumbly crust, but do not press down. Bake for another 20 minutes.

Let cool completely and then cut into bars. If you wish, you can sprinkle an additional tiny pinch of coarse salt on top of the crust before it cools completely.

Eat, indulge … and repeat! Ahhh, bliss.

for all those wanting to reduce the calories a little bit – I used one stick butter and one small container of plain nonfat Greek yogurt instead of the full cup of butter. They still came out wonderfully and were enjoyed by many at the bluegrass fest in SF last weekend.

Okay, these are now my favorite dessert on this earth, and that is really saying something. I mean, these are terrifically fantastic. Make sure and add the kosher salt on top at the end because the salt really compliments the sweetness of the bar. I’m going to ask my husband to make these for my birthday instead of cake!

These were quick and easy to make. They were *almost* all gone at the large dinner I brought them to. Everyone loved them.

*mine were runny – I guess “cool completely” means they need to be refrigerated, because I served them 5 hours after prep and they were too runny.
*stay close to the 1/4 tsp of sea salt! it was pretty powerful.

These are just perfect. I have made them several times already and have gotten many compliments on them. I sprinkle sea salt on the top and use caramel topping instead of butterscotch.

Crazy, crazy rich. I loved the edges, but the middle was a bit too sweet and gooey for me. I’m thinking less caramel, or substituting fruit preserves, would make it perfect. But it disappeared fast at the party I took it to.

I would love to give thse more stars. Took them into work and they didn’t get the wow reaction I was looking for. Everyone ate a little but they are VERY rich so you need to cut them up in very small bars. No one went back for seconds unfortunately. The largest jar of caramel I could find was 16 oz. and I thought the caramel was still very runny even though I put the full 6 tbsp. in. I wasn’t sure if that was how it was supposed to be? Love the idea of these though…
