Description

A no-bake addiction.

Ingredients

  • 2 cups Vanilla Wafers
  • 1 cup Sugar
  • ½ cups Nuts, Either Almonds, Pecans Or Walnuts
  • ⅓ cups Butter, Melted
  • ¼ cups Rum
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Almond Extract

Preparation

In a food processor, combine the first 3 ingredients, and pulse until it looks like fine breadcrumbs. Place in a bowl and add the melted butter, rum and extracts. Shape into 1/2″ balls and place on a cookie sheet, cover with waxed paper and place in the fridge overnight. The next day, roll in either granulated or powdered sugar. Store in an airtight container in the fridge.

I have made these with bourbon instead of rum (I live in Kentucky, it’s practically law to use bourbon whenever possible). If you coat them with chocolate, they are even more addictive!

Yum! I made these as part of my Christmas treat bags. Instead of 1 teaspoon almond extract, I used 1/2 almond and 1/2 cocount extract and I also added some coconut flakes to the food processor. Easy and delicious :)
