Description

Soft and chewy pumpkin squares. Full of everything fall!

Ingredients

  • FOR THE SQUARES:
  • 2 cups Old Fashioned Oats
  • 1 teaspoon Cinnamon
  • 1 teaspoon Pumpkin Pie Spice
  • ½ teaspoons Salt
  • ¼ cups Chopped Walnuts
  • 1 cup Pureed Pumpkin
  • 2 teaspoons Vanilla Extract
  • ¼ cups Applesauce, No Sugar Added
  • 3 Tablespoons Honey
  • ½ cups Light Brown Sugar
  • FOR THE ICING:
  • 3 teaspoons Milk
  • ¼ cups Powdered Sugar
  • ¼ teaspoons Cinnamon
  • ¼ teaspoons Vanilla Extract

Preparation

Preheat the oven to 350ºF. Liberally spray an 8×8 baking sheet and set aside.

In a large bowl, combine the oats, cinnamon, pumpkin pie spice, salt and walnuts. Set aside. In another bowl, combine pumpkin, vanilla, applesauce, honey and brown sugar. Mix well. Pour the liquid into the dry ingredients. Stir well until combined.

Press the mixture into the prepared pan and bake for 40-45 minutes. The middle will still be springy. Let the pan sit for 20 minutes before cutting.

Make the icing by combining the milk, powdered sugar, cinnamon and vanilla in a small bowl. Mix with a small whisk or a fork until well combined. Drizzle over the squares as you desire.

Slice into squares.
