Description

Delicious pumpkin muffins that are easy to make and low fat!

Ingredients

  • FOR THE MUFFINS:
  • 1 box (18 Oz. Size) Boxed Vanilla Cake Mix
  • 15 ounces, weight Canned Pumpkin
  • 2 whole Egg Whites
  • ½ cups Water
  • 2 teaspoons Pumpkin Pie Spice
  • FOR THE FROSTING:
  • 4 ounces, fluid Cream Cheese, Room Temperature
  • 1 cup Confectioners Sugar
  • 2 teaspoons Cinnamon

Preparation

Mix together all ingredients. Spoon batter into lined muffin pans. Bake at 350ºF for 18-20 minutes until a toothpick inserted in the center of a muffin comes out clean. Makes 24 muffins.

To make the cinnamon cream cheese frosting, mix frosting ingredients together. Frost cupcakes as desired.
