These are a delicious option for a hand held treat. And they are small enough to eat three or four and not feel guilty. Perfect for Thanksgiving or Christmas!
Preheat oven to 375 degrees F. Line two 24-count mini cupcake pans with mini cupcake papers.
Place one mini Vanilla Wafer (flat side down) in the bottom of each cup. Beat together the next seven ingredients (cream cheese through nutmeg) in a large bowl until light and fluffy. Spoon cheesecake filling (a scant tablespoon) into each cup.
Bake in the preheated oven for 12 minutes. Remove from oven and cool. Refrigerate so that they are nicely chilled. Top with whipped cream before serving.
Makes about 48 bite-sized cheesecakes.
