This is a great cake! I actually made a cocoa frosting for it (ran out of peanut butter)and the whole thing was delicious. I lightened it up a bit…fat free sour cream, egg whites and reduced fat peanut butter. Still dense, moist, wonderful.

Excellent! It has just the right balance of peanut butter- not too cloying or overpowering. I was afraid the frosting might not work out, as it seemed to “break” while waiting for it to boil, but it smoothed out when I added the sugar and turned out delicious. This is an awesome alternative to the everyday chocolate or yellow cake!

Nothing but compliments from my crowd! I didn’t think the icing would come together (crazy separation when boiling) but it turned into creamy deliciousness. Thank you for sharing!

When I made this cake I sprinkled some course sea salt on top. Seriously, this could be the very best cake I’ve ever eaten. Ever.

I love peanut butter and I know I will love this cake but I also have a granddaughter and a daughter-in-law that are allergic to peanut butter. Do you think if I use the imitation peanut butter such as Sun Butter that this would turn out okay? Any thoughts on this?

This is so ridiculously delicious it is just wrong! I added cocoa to the icing. It was great. I agree completely with Sarahc11…could be the very best cake..ever.

Hi Pam, I think you could substitute Sun Butter just fine. I actually use almond butter a lot, and it’s a great substitute if you’re allergic to peanut butter. Keep in mind the texture may be different since the creamy peanut butter is a little smoother.
