Description

My Grandmother Shuler made this for every family gathering.

Ingredients

  • FOR THE CAKE:
  • 2 sticks Butter
  • ½ cups Crisco
  • 3 cups Sugar
  • 5 whole Eggs
  • 1 teaspoon Vanilla
  • 3-½ cups All-purpose Flour (I Use Red Band)
  • 1 cup Half-and-half
  • 1 Tablespoon Lemon Juice
  • _____
  • FOR THE GLAZE:
  • ½ sticks Butter (for Glaze)
  • 2 Tablespoons Lemon Juice (for Glaze)
  • Confectioners Sugar To Mix For Glaze

Preparation

Grease a tube cake pan or two loaf pans and set aside.

Cream butter and Crisco until creamy. Add sugar and mix well. Add eggs, one at a time. Continue mixing at medium speed. Add vanilla. Then blend in flour and half-and-half at low speed until well mixed. Mix at medium for about 2 minutes. Fold lemon juice in the batter by hand. Pour the batter in the tube pan or loaf pans.

For the tube pan, bake at 350 degrees (F) for about 1 hour and 15 minutes. If using two loaf pans, bake at 350 degrees (F) for about an hour.

Make the glaze right before the cake comes out of the oven. Melt butter (in the microwave or on the stovetop on low heat). Remove from heat and mix with lemon juice; add confectioner’s sugar – just enough until the glaze is stiff. Spread over hot cake as soon as you take it out of the oven.
