Description

My mother-in-law calls this a pudding, but we call it apple cake. It’s yummy and goes great after dinner, or with a cup of coffee for breakfast. Great use for apples that are close to being too ripe.

Ingredients

  • 2 cups Sugar
  • 1-¼ cup Oil
  • 2 whole Eggs
  • 3 cups Flour
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 3 cups Diced Apple
  • ½ cups Chopped Nuts

Preparation

Mix together sugar, oil and eggs.

In a separate bowl combine dry ingredients, then add to the sugar mixture. Stir in apples and nuts.

Spread in a greased and floured 13 x 9 pan. Bake at 350ºF for 45 minutes.

Maybe I’m a dunce but although I saw the brown sugar in the step-by-step instructions, the brown sugar was omitted on the recipe card. I made this recipe yesterday and it was good but the brown sugar would have made it great.

My recipe from my grandmother is exactly like this one and she called it Ozark Apple Cake. It is a wonderful recipe.

So easy and very good. My son and I made this because we were looking for something quick and easy for him to help bake. He doesn’t like it, but I think it’s great.

This is my new favorite fall treat. It’s so easy to make and bakes really well. I served it with cinnamon whipped topping but next time I am going to make real whipped cream or get some ice cream. But I also ate it for breakfast the next day with nothing and it was STILL great!

Very easy to whip up, the entire family loved it. We served it warm with vanilla ice cream.
