Description

My sister-in-law gave me this recipe back when we were both young whippersnappers and newly married. This is the recipe that started me liking rhubarb.

Ingredients

  • 5 cups Chopped Rhubarb
  • 1 cup Granulated Sugar
  • 3 Tablespoons Flour
  • 1 cup Brown Sugar, Packed
  • 1 cup Oats, Regular Or Quick Cook
  • 1-½ cup Flour
  • 1 cup Butter Or Margarine

Preparation

Preheat oven to 375F.

Combine the rhubarb, white sugar, and 3 Tablespoons of flour. Pour into a 7 x 11 inch baking dish that has been sprayed with a little oil.

Combine the brown sugar, oats, 1-1/2 cups flour and butter.

Pat this mixture down firmly over the rhubarb mixture. Bake for 40 minutes. Best when served warm.

This is absolutely the best rhubarb oatmeal crust recipe I have ever tried. It’s delicious, and I’m about to eat the whole thing by myself.

I love this! My mom used to make this when I was a kid growing up. Especially good with vanilla ice cream!

Loved how this wasn’t a true ‘crumb’ topping but yet the it was very crunchy! I picked this recipe to try since it called for a large amount of rhubarb compared to other recipes. I will admit I used a mix of sugar, crystalized honey, and brown sugar for the filling since I discovered I was almost out of sugar – it worked fine. Filling thickens up nicely – tasty and easy.

So easy and delicious! This is so good in fact that my husband said to me “OMG if I had not already married you I would propose right now!!” Cue us laughing our heads off and then eating half the pan. This is a keeper! Thank you for sharing this gem. <3
