No Butter Apple Cake

Description

This apple cake does not have butter and the texture becomes soft, moist and somewhat chewy with just eggs, sugar and flour. And lots of apples.

Ingredients

  • 4 whole Eggs
  • 1 cup Sugar
  • 1 cup All-purpose Flour
  • 1 Tablespoon Baking Powder
  • 1 Tablespoon Cinnamon
  • 2 whole Golden Apples (diced, Coated With 1 Tablespoon Cinnamon And Flour)
  • ½ cups Chopped Nuts (walnuts, Pecans, Or Hazelnuts)

Preparation

1. Beat eggs and sugar in a mixing bowl for a minute or two until it is all well blended, and the color is very light yellow.

2. Add flour, baking powder and cinnamon, beat at medium speed.

3. With the help of a spatula, mix in the diced apples and chopped nuts.

4. Pour the batter into a greased 9-inch pan lined with parchment paper.

5. Bake at 350ºF for 40 minutes or until a toothpick comes out clean.

I think you can definitely exclude the nuts. I am sure you do not want to take a chance of allergies with a 9-month old! There is no need for substitutions for the nut. But if you want to make it healthier, you can substitute brown sugar since it is not processed. You can substitute 1 cup – firmly packed. It would alter the taste a bit I believe. I would go for a light brown sugar for less molasses taste.

Thank you so much for this. I’m looking for baby food recipes for my daughter who is 9 months and saltless food is hard to find. I’ll have to exclude the nuts so I’m hoping it would be alright?…any thoughts on substitutions or is that even necessary?

Hi Westmonster. No I have not tried it with any other fruit but I would assume as long as the fruit holds its shape and does not dissolve under heat, it should be just as good. Would be good with strawberries I bet!

Have you ever tried it with a different kind of fruit? I think it could be great with blueberries, pears or maybe even strawberries (sans the cinnamon)?

Pretty delicious–I used all brown sugar instead of white and added a few more apples than called for. The only issue I had with this is that it didn’t end up having as crispy as a crust as I would’ve liked. I even baked it in a cast iron. Maybe it was the extra apples?

Nonetheless, everyone at my house loved this and it was even more delectable with some whipped cream (or Cool Whip depending on your laziness factor).
