Description

Quick and festive cheesecake berry parfaits, perfect for the summer since you don’t need an oven! Make 15 small parfaits or 7 large cups. Great for the fourth of July!

Ingredients

  • 9  Graham Crackers
  • 3 Tablespoons Melted Butter
  • 1 teaspoon Sugar
  • ½ teaspoons Ground Cinnamon
  • 16 ounces, weight Cream Cheese
  • 3 cups Milk
  • 1 package (3.4 Oz. Size) Instant Cheesecake Pudding Mix
  • ½ cans Plain Greek Yogurt
  • 1 teaspoon Lemon Juice
  • 1 teaspoon Lemon Zest
  • 1 cup Blueberries
  • 2 cups Sliced Strawberries

Preparation

Place graham crackers in a large Ziploc bag and crush them into crumbs using a rolling pin. When crushed finely, add melted butter, sugar, and cinnamon. Mix well.

In a mixing bowl, beat cream cheese with an electric mixer on medium speed. Gradually add milk, a little at a time. It may look a little watery. Beat in pudding mix until the filling is thick and smooth. Add Greek yogurt, lemon juice and lemon zest.

In glasses, layer graham cracker crumbs, blueberries, cheesecake filling, strawberries, cheesecake filling and top with more graham cracker crumbs. Feel free to change up the layering order or use other fruits such as raspberries or blackberries as your layers.
