Description

A refreshing, flavourful and fruity mojito bundt cake.

Ingredients

  • FOR THE CAKE:
  • 375 grams Flour
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Salt
  • 3 Tablespoons Fresh Mint Leaves, Chopped
  • 2 teaspoons Lime Peel, Grated
  • 250 grams Soft Butter
  • 250 grams Sugar
  • 1 teaspoon Vanilla Extract
  • 5  Eggs
  • 150 milliliters Milk
  • 60 milliliters White Rum
  • 2-½ Tablespoons Lime Juice
  • FOR THE FROSTING:
  • 2 cups Icing Sugar
  • 4 Tablespoons Milk
  • 1 Tablespoon Very Soft Butter

Preparation

1. Preheat oven to 180 C. Grease a standard size bundt cake pan.
2. In a medium sized bowl mix together flour, baking powder, salt, fresh mint leaves and lime peel.
3. Separately, in a large bowl beat together softened butter, sugar and vanilla until light and creamy. Add eggs, one at a time, mixing after each addition.
4. Gradually and alternating between the two, start adding dry ingredients and milk into the butter and egg mix. For example, mix in ¼ of dry ingredient mixture, mix in ¼ of milk, so on and so forth.
5. Add rum and lime juice. Mix well.
6. Pour into bundt cake pan. Bake for about 1 hour or until a toothpick inserted into the cake comes out clean. Remove from oven.
7. Cool for about 10 minutes in the pan and then transfer to a cooling rack.
8. Let the cake cool completely.
9. To prepare the frosting using electric mixer combine icing sugar, milk and softened butter. Spread over the cake and decorate with fresh fruits and mint (optional).
