Description

This case is so moist and delicious you better make two while you’re at it!

Ingredients

  • FOR THE CAKE:
  • 1-¼ cup Boiling Water
  • 1 cup Uncooked Quick Oats
  • ½ cups Shortening (yes, I Know)
  • 1 cup Brown Sugar (light Or Dark)
  • 1 cup White Sugar
  • 2 whole Eggs
  • 1 teaspoon Cinnamon
  • 1 teaspoon Vanilla
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • For Icing
  • 6 Tablespoons Butter
  • 1 cup Pecans Or Walnuts
  • 1 cup Coconut
  • ⅔ cups Light Brown Sugar
  • ¼ cups Half-and-Half
  • 1 teaspoon Vanilla

Preparation

Mix Boiling Water and Oats and stir. Let cool for a bit (until the mixture is just warm). Add shortening, 1 cup brown sugar, white sugar, eggs, cinnamon, and vanilla.

In another bowl mix together the flour, soda and salt.

Combine ingredients of both bowls and mix well.

Pour into a 9″ square pan and bake at 350 for 30-40 minutes.

ICING:

Combine Butter, Nuts, Coconut, 2/3 Cup of Brown Sugar, half & half and vanilla. Mix thoroughly and spread over warm cake.

Cut and Serve with a Smile!
