Description

This is a refreshing tropical bar.

Ingredients

  • FOR THE CRUST:
  • 1-½ cup All-purpose Flour
  • ¾ cups Butter
  • ½ cups Confectioners Sugar
  • ½ cups Shredded Coconut
  • FOR THE MANGO FILLING:
  • 16 ounces, weight Cream Cheese
  • 2 whole Eggs
  • ⅓ cups Lemon Juice
  • 1 cup Milk
  • ¾ cups White Sugar
  • 2 whole Mangos, Peeled And Cubed

Preparation

Blend all of the crust ingredients in a food processor and press into the bottom of a lightly greased 9×13″ pan. If you do not have a processor, you can use a pastry blender to incorporate the butter into the flour.

Bake at 350ºF for 18 minutes or until browned.

Blend the filling ingredients until smooth. Pour over the baked crust and return to the 350ºF oven for 30 minutes or until the filling is set.

Cool completely before serving.
