Description

A friend made this cake for my baby shower years ago. I still make it all the time. It’s light and refreshing and easy to make.

Ingredients

  • 1 box (18.25 Oz. Box) Butter-Recipe Yellow Cake Mix
  • ⅓ cups Vegetable Oil
  • 3 Tablespoons Water
  • 3 whole Large Eggs
  • 1 can (small 11 Oz. Can) Mandarin Oranges With Juice
  • 12 ounces, weight Whipped Cream
  • 1 box (large 5 Oz. Box) Vanilla Instant Pudding
  • 1 can (8 Oz. Can) Crushed Pineapple In Juice

Preparation

Preheat oven to 350 degrees. Grease and flour 3 round cake pans.

Mix together the cake mix, oil, water, eggs, and oranges with their juice. Place the batter in the pans. Bake for 23 to 25 minutes or until the cake springs bake when touched.

Mix the whipped topping, pudding, and pineapple together
and spread between cooled layers and on the top and sides of the final layered cake. Keep refrigerated.

No I don’t think it’s supoosed to be dry. this one is pretty moist because of the added juices from the fruit.

my mom has a mandarin orange cake recipe and it is her absolute favorite, but last time we made the cake it was very dry! is that how this cake is supposed to be? does this recipe turn out moist? thanks so much.

A friend made this same cake for my birthday several years ago and it is so delicious. I could not wait to get the recipe so I could make it anytime that I wanted one. As lovebake said, it is very light and refreshing which just makes it even more delicious. The only change in the one I had was coconut was sprinkled lightly over the top of the finished cake.
