Description

Perfect combination of light, minty cheesecake and dense, rich brownie!

Ingredients

  • FOR THE BROWNIE BASE:
  • 6 Tablespoons Butter
  • 2 ounces, weight Semi-sweet Chocolate
  • ½ cups Sugar
  • 2  Eggs, Lightly Beaten
  • 1 teaspoon Vanilla Extract
  • ½ cups All-purpose Flour
  • FOR THE CREAM CHEESE FILLING:
  • 8 ounces, weight 1/3 Less Fat Cream Cheese
  • ½ cups Sugar
  • ½ teaspoons Peppermint Extract
  • Green Food Coloring
  • 8 ounces, weight Fat-Free Frozen Whipped Topping, Thawed
  • Mint And Dark Chocolate Chips, Optional

Preparation

1. Preheat oven to 350ºF.
2. For the brownie base, in a large saucepan, melt butter and chocolate over low heat. Stir in sugar until smooth.
3. Mix in eggs and vanilla until well-blended. Stir in flour until combined.
4. Pour into a greased 9-inch spring form pan. Bake for 18-20 or until a toothpick inserted in center comes out clean.
5. Cool on wire rack.
6. While brownie base is cooling, prepare filling. Beat together cream cheese and sugar until smooth.
7. Beat in extract and food coloring. Fold in whipped topping.
8. Spread evenly over brownie. Sprinkle with chips. Cover and refrigerate for at least 1 hour before serving.
9. Remove sides of pan right before serving.
