Description

A wonderful, cinnamon-ey coffee cake!

Ingredients

  • ½ cups Chopped Walnuts
  • 1-½ cup Sugar, Divided
  • 2 teaspoons Cinnamon
  • 2 cups Sifted Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • ½ cups Butter, Room Temperature
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 1 cup Sour Cream

Preparation

Combine the walnuts, 1/2 cup sugar and cinnamon and set aside.

Grease a tube pan.

Combine the flour, baking powder, baking soda and salt.

Using your mixer, beat the butter until creamy. Gradually add the remaining 1 cup of sugar. Add the eggs, one at a time. Add vanilla, beat until blended. Add flour mixture alternatively with the sour cream.

Pour half of the batter into the pan, and then top that with half of the nut mixture. Pour the remaining batter in, and then top with the rest of the nut mixture.

Bake for 40 minutes in a 350°F oven.

Rachel, Thank you for sharing your Mom’s recipe with the rest of us. I just put this cake in the oven and will serve it at a midweek Bible study. I can’t wait to cut into it. If the taste on the batter spoon was any indication of how yummy the finished product will be… I’m in trouble.

Wow! This is a great cake! Thanks for sharing your Mom’s recipe. It has a homey appeal and the flavor is wonderful. I love how moist and soft it is. “Libby’s Coffeecake” just became my “go to” recipe for coffeecake.
