I had this cake in girl scouts when I was younger (an orange creamsicle version) that I never learned how to make.

This is a favorite cake of my families. My daughter requested this cake for her 24 birthday. She always made it for her friends while in high school….this is a recipe with many memories. It’s funny to see you are from Minnesota. I’m from MN too! It’s funny because….I don’t think you can live in MN without experiencing Jell-O poke cake!

Oh, yeah! I make this last week (and just bought more white cake mix) for guests. I almost always make it a round layer cake with two different, but complimentary flavors. This weeks cake was berry blue and cherry! My fave, and a Christmas MUST HAVE, is cherry and lime! Easy and always a winner!
PS, I have done cupcakes as well for school parties and it works out well too. Very refreshing cake.

I’ve prepared this cake with one addition: Add a layer of prepared pudding on top of cake, before the cool whip. I’ve made strawberry jello with chocolate pudding and, an odd favorite, lime jello with pistachio pudding. Just prepare instant pudding according to pkg directions.

I made this today and it was PERFECT. I used Strawberry but will definitely make it again with Orange for a Creamsicle affect. An easy, fun summer dessert!

I almost didn’t even post this one because it’s so simple, but now I’m glad I did! My Grandma would come visit us before we moved from South Carolina (she was a Minnesotan transplanted to New Orleans) and she said it was my brother and my’s favorite and would be gone in just one day. It definitely brings back memories of happy days.
I bet cupcakes would be wonderful. Just pour the Jell-o from a small spout for better control.
