Description

This cake is moist, delicious, and a one-bowl recipe. Serve with a scoop of vanilla icecream and garnish with diced fresh pineapple. Top off with a drizzle of caramel … oh boy! Pretty enough to serve special company.

Ingredients

  • FOR THE CAKE:
  • 2-¼ cups Flour
  • 1-¾ cup Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 2 teaspoons Ground Cinnamon
  • 4 whole Eggs, Beaten
  • ¾ cups Vegetable Or Canola Oil
  • ¾ cups Pureed Fresh Pineapple, Or Finely Minced
  • 1 cup Pineapple, Finely Diced

  • TO SERVE:
  • Vanilla Ice Cream
  • Caramel Sauce From A Jar
  • Finely Diced Pineapple For Garnish
  • Fresh Mint For Garnish

Preparation

1. Preheat oven to 350F. Coat a 9 x 13” pan with cooking spray, set aside.
2. In a large mixing bowl, add flour, sugar, salt, baking powder, baking soda, and cinnamon; mix well. Make a well in center and add the rest of the cake ingredients.
3. Mix until well blended; do not over mix. Pour into the pan and bake for 45 minutes. When a toothpick or cake tester comes out clean, it’s done. Cool completely. Serve with a scoop of vanilla ice cream and a drizzle of caramel sauce. Garnish with a sprig of mint and finely diced pineapple.
