Description

Four easy ingredients will give you one tasty Fall treat. Enjoy!

Ingredients

  • 1 box Spice Cake Mix, 18.25 Ounce Box
  • 1 can (15 Oz. Size) Pumpkin
  • 1 container Cream Cheese Frosting, 12 Ounce Container
  • 12 pinches Pumpkin Pie Spice

Preparation

1. Preheat the oven to 350 F.
2. Mix together your spice cake mix and the can of pumpkin. Divide the batter among 12 paper lined muffin tins.
3. Bake in the oven for about 15 minutes (or follow the instructions on the back of your box).
4. Once a fork comes out clean, remove the cupcakes from the oven and let them cool for at least 10 minutes before frosting.
5. Frost the cupcakes with the cream cheese frosting (as much or as little as you would like), and top with a sprinkle of pumpkin pie spice on each one. Grab a plate, and enjoy!

I’m sorry but these were a big disappointment. The batter was so thick that they baked up more like muffins than they did a light and fluffy cupcake. 2 Cans of pumpkin made the batter very heavy and wet–even after they were baked the “cupcakes” were still very wet. They took a lot longer to bake than 15 min. Also, the recipe makes more like 18 cupcake/muffins because it is so thick. Good recipe idea but I will not be adding this one to my recipe box.
