Description

It’s a perfect little chocolate cake with a crispy, coconut-y topping.

Ingredients

  • FOR THE CAKE:
  • 6 Tablespoons Vegetable Oil
  • 1 Tablespoon White Vinegar
  • 1 cup Water
  • 1 teaspoon Vanilla Extract
  • 1-½ cup All-purpose Flour
  • 1 cup Granulated Sugar
  • 3 Tablespoons Unsweetened Cocoa
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • FOR THE TOPPING:
  • 9 Tablespoons Melted Butter
  • ⅓ cups Evaporated Milk
  • ½ teaspoons Vanilla Extract
  • 1 cup Brown Sugar
  • 1-½ cup Coconut Flakes

Preparation

Preheat the oven to 325 F.

In a large mixing bowl, whisk together the oil, vinegar, water and vanilla extract until it is an evenly mixed liquid. Add the flour, sugar, cocoa, baking soda, and salt and mix together until it is combined. Pour in an even layer into a 9 x 13 baking sheet. Bake for 35 minutes.

While cake is baking, mix the butter, evaporated milk, vanilla, brown sugar and coconut flakes together. When the cake is done, let it cool slightly then spread the topping evenly over the cake.

Place in the oven and broil on high, until golden brown, about 6-8 minutes.
