Description

Inspired by the flavours of a classic cosmopolitan, this light orange sponge cake is topped with a delicious mixture of cranberries, lime and vodka.

Ingredients

  • FOR THE CAKE:
  • 4 ounces, weight Self-Rising Flour
  • 4 ounces, weight Caster Sugar
  • 1 teaspoon Baking Powder
  • 4 ounces, weight Unsalted Butter, Softened
  • 2 whole Eggs
  • 1 teaspoon Vanilla Essence
  • 2 whole Oranges, Zest Of
  • 1 whole Orange, Juice Of
  • _____
  • FOR THE TOPPING:
  • ½ pounds, 2-⅝ ounces, weight Cranberries, Fresh Or Frozen
  • 2 Tablespoons Caster Sugar
  • 2 whole Limes, Zest And Juice
  • 1 tablespoon, 2 teaspoons, 1-¼ pinches Vodka
  • Creme Fraiche Or Ice Cream, For Serving (optional)

Preparation

1. Preheat the oven to 170C and grease a 7 inch cake tin with butter.

2. Sift the flour, sugar and baking powder into a large bowl. Add the butter, eggs, vanilla essence, orange zest and orange juice and whisk until light and fluffy.

3. Pour the batter into the prepared cake tin and bake in the oven for 20 minutes until golden brown. Turn the cake out onto a rack to cool.

5. To make the topping, put cranberries, sugar, lime zest, lime juice and vodka (optional) in a saucepan and cook over a low heat for approximately 20 minutes until the cranberries have begun break down. Add more sugar if it is too sour for your taste. If needed, turn the heat up to boil off some of the excess liquid, then remove from heat.

6. When the cranberry/lime mixture has cooled a bit, place your cake on your serving platter and spoon topping onto the top of the cake. Serve with creme fraiche or ice cream.
