Description

Bombocado is a Brazilian sweet treat with two different layers: a cornbread and creamy one!

Ingredients

  • 3 whole Eggs
  • 3 cups Sugar
  • 2 cups Milk
  • 1 cup Cornmeal
  • ½ cups Grated Parmesan Cheese
  • 3 Tablespoons All-purpose Flour, Plus More For Coating The Pan
  • 2 Tablespoons Baking Soda
  • 1 Tablespoon Butter, At Room Temperature, Plus More For Greasing The Pan

Preparation

Adapted from Quaker’s Milharina package.

Preheat oven to 400ºF. Grease a round cake pan (8″ diameter) with butter and flour it. Set aside.

Put eggs and sugar into a blender and mix until a cream is formed. Them put the remaining ingredients into the blender and mix for 3 minutes.

Pour the batter into the rounded cake pan and bake for 50 minutes or until an inserted skewer comes out clean.

Hi ceramartin,
You may use a stand mixer! Actually, the original recipe requires a stand mixer, but, since I still don’t have one, I used a blender.
