Description

Homemade coconut ice cream with chocolate flakes and macadamia nuts. 5 ingredients, no cooking.

Ingredients

  • 1 can Cream Of Coconut
  • 2 cups Half-and-half
  • ⅓ cups Coconut
  • ⅓ cups Macadamia Pieces
  • ⅓ cups Semi-sweet Chocolate, Finely Chopped

Preparation

Stir the cream of coconut, half & half together. Pour into the freezer and follow your freezers directions.

A few minutes before the ice cream is done, add the nuts, coconut and chocolate shavings.

You can eat this right away, or put it in a container and freeze it for later. Some home made ice creams can be very hard after they are stored in the freezer, but this one dips easily.

This amount will make 1 Cuisinart freezer full. If you’re using a regular freezer that makes a gallon, you’ll need to double the recipe.

You may also be able to use more than 4 cups of half & half in a regular freezer, but that should still work. You just get more ice cream.

OMG!! This is sooooo good! Made it for a Hawaiian Luau themed party. The only changes I made were to use 1 3/4 cups of fat-free half and half and 1/4 cup of heavy cream. Toasted the coconut and macadamia nuts for a few minutes. Woderful. Thanks so much for this recipe–going in to save box immediately.

Tried this as the first recipe in my ice cream maker. So easy and yummy…like a frozen Almond Joy candy bar, but so much better!

this was such a quick and simple ice cream base! i had all the ingredients in my house, and it’s much easier than the typical custard style…and absolutely delicious! i toasted the shredded coconut, subbed skim milk for the half & half, used yumnuts coconut almonds instead of macadamia nuts, and i added 1 tsp to melted chocolate chips so it would make very small chocolate chips that don’t entirely freeze.
