Dense cake with a dark chocolate ganache frosting. It has two cups of yoghurt in the cake so it has to be healthy…right?
Preheat oven to 160C (325F).
In a mixer beat the melted butter, eggs and the sugars until creamy. Add the yoghurt and mix well. Add the flour, baking soda and cocoa and mix gently until all combined.
In regular size muffin cases, place muffin papers in all of the holes. Add 1/4 cup of mixture to each case. (This way it should rise to just under the level of the brim of the paper.)
Bake at 160C for 20 minutes.
Remove and cool on a wire rack.
Frosting:
Heat the heavy cream and 1/2 cup butter in the microwave until it just comes to the boil. Remove and add the broken up chocolate. Let it sit for a few minutes then stir until smooth.
Let it sit for at least an hour or until it becomes ‘spreadable’. I sometimes have to put it in the fridge in summer months in order to help it along.
Spread on cool cupcakes. Can also be piped.
NOTES:
*I have only used natural yoghurt which is plain, unflavored yoghurt.

These look wonderful & as I am just beginning to learn how to bake I must ask, is 200 grams of chocolate right???

These are excellent. The only thing I’ve altered was doubling the amount of cocoa.

After bugging Bindi with many questions I finally made this as a cake…and what a response I had from everyone who tried it! It was a huge hit! It was very very moist and the dark chocolate frosting complemented it well. Give this a try if you want something different from your average chocolate cake.
The only problem I had was the butter in the frosting didn’t mix well (this was most likely my fault) so I might reduce the amount or leave it out altogether next time. Also if you are making it as a cake you might want to make less frosting, I had lots left over (not a bad thing in my opinion though

Thanks for letting me know, Some of my recipes seem to have ingredients that just drop off the list. I have updated the Hedgehog 3 times with one ingredient.
It is 200g good quality dark chocolate. I have been told it is delicious with white chocolate too.

thanks a lot! i don’t know if it’s my eyes but i can’t seem to find the chocolate for the frosting in the ingredients list.
