Description

A yellow cake mix is jazzed up with bananas and chocolate chips, then topped off with a honey peanut butter frosting. It doesn’t get much better!

Ingredients

  • FOR THE CAKE:
  • 1 box (18 1/4 Oz. Size) Yellow Cake Mix
  • ¼ teaspoons Baking Soda
  • 1 teaspoon Cinnamon
  • ⅓ cups Oil
  • ¾ cups Water
  • 3 whole Eggs
  • 1 cup Brown Bananas, Smashed
  • 1 cup Mini Chocolate Chips
  • FOR THE FROSTING:
  • 1 cup Butter
  • ½ cups Peanut Butter
  • 4 Tablespoons Water, Divided
  • ⅛ teaspoons Salt
  • 1 teaspoon Vanilla
  • 4 cups Powdered Sugar
  • 3 Tablespoons Honey

Preparation

For the cake (double if you want to make a layered cake):
Combine cake mix, baking soda, cinnamon, oil, water and eggs and beat on low for 1 minute. Increase the mixer speed a little bit and beat for 2 more minutes. Stir in the bananas and chocolate chips by hand.

Grease and flour an 8-inch pan and pour the batter in. Bake at 350ºF for about 38 minutes. Check with a toothpick to be sure your cake is finished. Cool in the pan for 10 minutes then flip out on a wire rack to cool completely. Frost.

For the frosting:
Cream butter and peanut butter. Add 2 tablespoons water, salt, and vanilla and cream again. Slowly add the powdered sugar. After all the sugar is added, beat in another 1-2 tablespoons water. Beat in the honey until creamy.

I’m a little confused by the instruction in the recipe that says: “For the cake (double if you want to make a layered cake)” … The recipe starts with a whole box mix, which usually makes 2 layers already. Am I missing something? :)

This cake turned out really moist and light. The kids loved the uniquely peanut-buttery icing!
