Description

A great guilt-free chocolate pudding recipe!

Ingredients

  • 2  Avocados
  • 2 Tablespoons Almond Milk / Water
  • 4 Tablespoons Cocoa Powder
  • 3 Tablespoons Ground Almonds
  • 1 teaspoon Vanilla Extract
  • 1 Tablespoon Stevia, Sugar, Honey Or Agave Syrup

Preparation

1. Slice the avocados and scoop the flesh out of the peel.
2. Place the avocado flesh into a food processor along with the almond milk/water and blend until smooth.
3. Add the cocoa powder, ground almonds and vanilla extract and blend.
4. I recommend trying your mixture now and you can sweeten it if you wish. If you do want to then add the stevia, sugar, honey or agave syrup and blend once more.
5. Place your mixture into ramekins and chill in the refrigerator for 1-2 hours.

I absolutely loved this! I found the taste most pleasing using honey vs. the stevia, syrup, or agave (I tried them all) I have even add a sprinkle of sea salt to give the mousse even more depth in flavor! Even our kiddos gobbled this up. We eat a lot of Avocados (so healthy!) but now they have even been asking for the “avocado pudding”!
