Description

A deliciously decadent caramel apple cake.

Ingredients

  • FOR THE CAKE:
  • 2 sticks Butter
  • 1 cup Brown Sugar
  • 1 cup White Sugar
  • 3 whole Eggs
  • 1 teaspoon Vanilla
  • 3-½ cups Cake Flour
  • 2 teaspoons Baking Powder
  • 1 can 12 Oz. Can Of Evaporated Milk
  • 2 teaspoons Apple Pie Spice
  • 2 whole Large Apples, Chopped
  • 7 ounces, weight Cubed Caramels, Chopped
  • _____
  • FOR THE ICING:
  • 7 ounces, weight Cubed Caramels
  • 3 Tablespoons Heavy Cream
  • 1 stick Butter
  • 3 cups Powdered Sugar

Preparation

Cream together the two sticks of butter along with the brown and white sugars.

Next up, add in your eggs and vanilla. Mix it well and add in your cake flour and baking powder.

Combine the ingredients together and then add in your evaporated milk and your apple pie spice.

Lastly you’ll add in your apples and the chopped up caramels.

Fold them into the mix, grab yourself two 9″ cake pans that have been greased and lined with parchment, and pour equal amounts of batter into each pan.

Place them in an oven set to 350 degrees F for 35 minutes or until a toothpick comes out clean.

Grab the other half of the bag of caramels and throw them in your double boiler along with the cream. Melt it on low heat.

Once it’s melted completely, remove it from the heat and give it a few minutes to cool down.

While your caramel is cooling, drop a stick of butter and the powdered sugar into your mixer. Bring your cooled melted caramel over and drop it into the bowl as well. Mix it all together.

Frost cake with frosting and enjoy.

The cake had good spice flavor but I would have liked a little more apple flavor, and the caramel in the cake got a little hard. The frosting was great!

Brought this cake in to a wedding shower at work… I left with half of one piece left! I think that speaks for itself. Everyone was raving & requesting the recipe. I doubled the recipe, to make the party cake 3 layers tall & keep one layer for my family–good thing! My only complaint is that the frosting is really sticky & a bit tough to work with, but man, is it delicious. For next time, I need to remember to bump my oven temp down, because the cake got too brown on the outside due to my awesome, but dark, non-stick cake pans. A tasty recipe, that’s for sure!
