Description

A very dense and sweet cake that you can make for a bake sale, food day at work or just to enjoy.

Ingredients

  • 3 cups Flour
  • 2 cups Sugar
  • 1 teaspoon Cinnamon
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 3 whole Eggs
  • 8 ounces, weight Crushed Pineapple And Its Juice
  • 1 cup Chopped Pecans (or Walnuts)
  • 1-½ cup Canola Oil
  • 1 teaspoon Vanilla Extract
  • 2 cups Mashed Bananas

Preparation

Preheat oven to 325F (if using a non-stick pan, then 350F).

Coat a tube pan with baking spray.

Sift together the dry ingredients in a large bowl and make a well in the center.

Add the eggs, pineapple, nuts, oil, vanilla and bananas into the well.

Stir with a wooden spoon or sturdy rubber spatula until everything is moist.

Pour into the tube pan and bake for about 75 minutes, or until a toothpick comes out clean.

Cool completely, remove from pan and you are ready.

You know, I tried fruit cocktail but I couldn’t get the juice ratio down. I actually thought about grating apples. I wonder if more than 2 cups would need to be used to keep it moist. Give it a try, let me know how it works out.
