My chocolate chips called in and used a vacation day; butterscotch is being called in as a temp here to be made into a ganache (pronounced guh-nosh).
Place butterscotch chips and butter in small mixing bowl. Heat cream in a small sauce pan until it comes to a boil. Pour over butterscotch and let sit 3 minutes; whisk until smooth and let cool to thicken as desired and pour over cake or individual desserts.
You can let ganache cool completley and then whip it to create a lighter, fluffier texture.
