Description

A Cozy Kitchen makes Blueberry Cream Pie – the perfect summer treat!

Ingredients

  • 1 whole Baked Pie Shell
  • ½ cups Whipping Cream
  • 3 Tablespoons Sugar, Divided
  • 8 ounces, weight Cream Cheese, Softened
  • 1 teaspoon Vanilla Extract
  • 2 cups Fresh Blueberries

Preparation

In a bowl, beat the whipping cream and 1 tablespoon of sugar until stiff peaks form.

In a larger bowl beat together the rest of the sugar, cream cheese and vanilla extract. Once everything is well combined and the cream cheese is smooth and creamy, slowly fold in the whipping cream. Once everything is combined gently fold in the blueberries.

Pour the filling into a prepared (cooked) pie shell and chill for at least and hour to allow the pie to set up. Now try to stop yourself from eating the whole thing at once.

Extremely good pie. I think though next time, (and there will definately be a next time!) I’m going to switch vanilla extract for some lemon extract.

Thank you for this delicious recipe! I made it last night with some blueberries a friend brought me from her parent’s blueberry farm in Louisiana. They were so perfect in this recipe. I used a graham cracker crust because I did not want to have to turn on the oven! Way too hot! This pie helped cool things down!

This was AMAZING!!! I had my doubts about the cream part of it setting when I folded in the whipped cream, but it came out beautifully!

This was amazing, I also used a graham cracker crust and although I might add a little bit more whipping cream when I make this again, it really is a wonderful, cool dessert!

I think it would be excellent with a graham crust. The filling is delicious, I think I will add a little lemon zest as well.
