Preheat oven to 350 F. Cut bread into cubes.
Mix milk and pudding mix in a large bowl. Add bread and mix well. Let the bread soak for 3-4 minutes. Stir in caramel bits.
Put it into a greased 9×5 bread pan. Mix the brown sugar and cinnamon in a small bowl and sprinkle evenly on top of the loaf.
Bake at 350 F for 50 minutes.
