Description

A sweet and tangy fruit sauce, with a grown-up twist.

Ingredients

  • 1 cup Strawberries
  • 1 cup Fresh Rhubarb
  • 2 Tablespoons Sugar (less If Your Berries Are Really Ripe)
  • 2 Tablespoons Honey
  • ⅛ teaspoons Black Pepper
  • 1 pinch Salt
  • ¼ cups Water
  • 2 Tablespoons White Or Rosé Wine (can Substitute Orange Juice)

Preparation

Hull and quarter your berries; cut the rhubarb into 1/4″ slices. Mix all the ingredients except wine in a pan, set over medium heat. Allow to come to a low boil, then turn to a simmer. Allow to simmer for 10-20 minutes, stirring occasionally, until the fruit breaks down. The longer you simmer, the more it will break down. I simmered this batch about 30 minutes total. Add the wine, cook for another 5 minutes. Remove from heat and allow to cool before storing in the fridge or freezer.

I made this recipe to put in my homemade fat free greek yogurt. Can you say DIVINE! I didn’t have a white wine or orange juice on hand, so I didn’t add them to my compote. I don’t seem to miss it though. The strawberry rhubarb flavor is awesome. This recipe is a keeper and would be a great addition to waffles, pancakes, yogurt, fry bread, and pretty much anything you can think of.
