Description

Believe it or not, this recipe comes from a chance meeting, sitting beside someone on a train. We were talking recipes, he mentioned his grandmother’s beetroot chutney, and a few minutes later through the power of email, I had the recipe in my possession!

Ingredients

  • 3 pounds Beetroot
  • 1-½ pound Apples
  • 2 whole Onions
  • 1 cup Sugar
  • ½ teaspoons Ginger
  • 1 whole Lemon
  • 1 teaspoon Salt
  • 2 cups Vinegar

Preparation

1. Boil the beetroot in salted water for approximately 1 hour, then skin and cut into small pieces.

2. Cut baking apples into small pieces and place into a large pan.

3. Chop onions and place into pan.

4. Add sugar.

5. Add ginger.

6. Add lemon juice.

7. Add salt.

8. Add white vinegar.

9. Boil the ingredients from step 2 to 8 (everything but the beets) for 20 minutes.

10. Add the beetroot and boil for a further 15 minutes.

11. Allow to cool and store in resealable containers.

yeah, other crazy people who love beets! this sounds great, but plan to make a smaller batch, as i am the only one around here!

absolutely, it’s actually the same thing. Beetroot is the old fashioned word for beet, so you have everything you need! :)
