Description

This pesto is made with almonds instead of the traditional pine nuts. Quick and easy. Great on flavor and low in calories – only 55 calories per tablespoon!

Ingredients

  • 2 Tablespoons Raw Almonds
  • 2 cups Fresh Basil Leaves, Packed
  • 1 clove Garlic
  • ¼ cups Parmesan Cheese, Freshly Grated
  • 1 pinch Salt
  • ¼ teaspoons Ground Black Pepper
  • 3 Tablespoons Extra Virgin Olive Oil
  • 2 Tablespoons To 3 Tablespoons Water

Preparation

1. In a microwave-safe small bowl or cup, cook almonds in microwave on high 1 1/2 minutes or until lightly browned, being careful to not burn. Cool slightly.

2. In food processor, pulse almonds, basil, garlic, parmesan cheese, salt and pepper until finely chopped.

3. Gradually pour in olive oil and 2 Tablespoons water and continue food processing until blended into a a paste. You made need to add additional 1 Tablespoon of water to get desired consistency.

**1 serving is 1 tablespoon of pesto paste. Only 55 calories per tablespoon!

Put a tablespoon on some warm pasta and enjoy!

If you’re going to store it in the refrigerator, pour a bit of olive oil over the top to keep it from turning brown.

Love this recipe! The almonds in it are a great sub for pine nuts & much cheaper!

My first time making pesto! It was great! My husband said it could use more garlic – but we love garlic and generally over-garlic (I had already added an extra clove).
